Le rapport valorisé des cuisiniers au terroir : l'évidence à l'épreuve de la cuisine

Résumé. La valorisation du rapport au terroir et, plus largement, au lieu (et finalement au monde) par la cuisine est fortement discriminante pour le cuisinier. En effet, la cuisine constitue, dans la complexité de sa construction, un point déterminant de compréhension du paradoxe entre rapport au terroir vécu et valorisé. La qualification spontanée de la cuisine par les cuisiniers exprime toutes les nuances de ce rapport au lieu autant que sa nature réelle. Entre fermeture et ouverture, la valorisation qui s'opère à travers la cuisine fait l'objet de rééquilibrages réactivant in fine la question de l'usage d'un vocable plus représentatif de l'alliance entre créativité inhérente au métier de cuisinier et lien au lieu constitutif de cette même condition de cuisinier.

Abstract. The valuation of the relation to the country and, more over, to the place (and eventually to the world) by the cooking is highly discriminating for the cook. Indeed, the cooking is, through the complexity of its construction, a determining point of the understanding of the paradox existing between the relations to the lived and valued country. The spontaneous qualification of the cooking by the cooks expresses all the nuances of this relation as much to the place as to its real nature. Between closure and opening, the valuation created through the cooking has been the object of rebalancing, reactivating in fine the question of the use of a word more representative of the alliance existing between the creativity inherent of the cook's job and the link to the constituent place of this same cook's condition.
